I'm Not Dead in Central Park

 
Yup, it's been awhile.  Sorry to anyone that may be reading my blog (I know there's got to someone out there eagerly awaiting my next glorious post).  It's your lucky day, I'm still alive and I've got a fantastic recipe, in fact two(ish).  So, here's the scoop.  One of our local pizzerias makes a wicked Thai inspired pizza the Thai Pie.  I'm so enamored with said Thai Pie that I decided I could make my own LC version, and I succeeded :)  Here she is:

  • 1 Flat-Out Light Original wrap (6g net carbs per wrap)
  • 2 Tbs Thai peanut sauce, I got mine at Target (4g net carbs per 2 tablespoons)
  • Shredded cheese to your liking (I'm a WI girl, henceforth, I LOVE my cheese)
  • Chopped broccoli, to taste
  • Chopped red onion, to taste
  • Chicken (I baked mine then chopped it up, about 1/4 cup)
  • Any other veggie toppings, red peppers, spinach, etc.

  • Spread the Thai peanut sauce on the flat out
  • Top with cheese, then other toppings
  • Place in 350 degree oven for about 10 minutes, keep an eye on it.  Bake it until the cheese is melted and the wrap is nice and crispy.
  • Eat & be happy :)
Roughly 10g net carbs per pizza. 
Total may vary depending on the sauce you use and the toppings you add.
 
 
 
 
 
So then, one boring Saturday night a few weeks ago, my equally as boring friend and I decided that since she's single (if you know a nice guy, let me know!) and my husband was out of town, that we should venture into the world of freezer meals.  With a bottle of wine of course.  So, after much internet and Pinterest searching, we found some super easy Paleo freezer/crockpot recipes at my fellow blogger's site
 
Here are our results:

Said friend and I were able to make 11 Paleo (and low carb) freezer meals in under an hour, this does include drinking and clean up time...  I do need to give her a big thanks for chopping the onions for me :)

Could This Be The Best Day Ever?!?!?

It just might be!  So February is that time of year when that fast food restaurant whips out those delicious green shakes that make me want to say "forget low carb, I'm gonna have me one of those".  But this year I've got their number, they've been out smarted!  Today, I've created a low carb Shamrock Shake :) It IS the best day ever!  I'm so in love with regular Shamrock Shakes that I even mailed one to my friend in Italy (as a joke, we both knew that wasn't going to be any good once it got there, especially with the Italian postal service...).  Ok so here's the skinny (get it?):

2 cups Bryers Carb Smart vanilla ice cream
1 1/4 cup Silk PureAlmond Unsweetened vanilla almondmilk
6-8 drops green food coloring
1/4 tsp mint extract

Blend everything together!  So simple!  You can even add some whipped topping (that's an additional 1g net carb but it's Saturday, live a little). 

Total net carbs: 16g for the entire confection :)

Let's Get This Party Started!

I'll just throw this out there, I've never done this before...blogging that is.  So, here's a brief introduction about me and why I'm here.  I'm a mother of two beautiful girls (3 years old and 8 weeks old), a wife, sister, daughter, friend, paramedic and student.  I love long walks (anywhere when the temperature is above 20 degrees), showers that last more than 3 minutes, the occasional uninterrupted trip to the bathroom, and snuggling with my kids.  I've forgotten what it's like to read a book for pleasure, take a shower longer than 4 minutes, and get more than 5 hours of sleep at night. 
What I haven't forgotten is how hard it is to loose weight after having your second baby.  I'm not a small person.  Never have been, never will be.  BUT, there was a time that I was a lot thinner than I am now.  And I want to get back there. 
After having my first daughter in 2009 I waited a good year or so to seriously start to loose weight.  I was successful.  I lost bout 70lbs in just over the course of a year by eating low carb and exercising as my schedule would allow.  I knew I wanted to have another child, so when I got pregnant in March of 2012 I was elated!  I vowed not to gain as much as I did with the first pregnancy...oops. 
So here I am, all fat and unhappy again looking back on those "before I had kids" pictures thinking how much I would give to be able to fit into those jeans I thought were huge back then.  This is my journey back to that place of having everything in my closet fit again.  Please help me and I'll try to help you! :)

Day One, February 1, 2013:
Breakfast: Two eggs, one slice of cheese and two strips of bacon (you will see this word a lot in my menu).  :)
Lunch: Ginormous BLT Wedge (half a head of ice burg lettuce, 2 tbls mayo, one Roma tomato, three strips of, you guessed it: Bacon).  DELISH!
